		<description>These are great tips, Carol.  I find that I am more likely to have a salad with dinner if everything is already prepped in advance.  I prep the lettuce as soon as I get it home from the store.  Wash it, chop it, then add it to an airtight container with a paper towel.  You&#039;ve got the bulk of your daily salad prep out of the way.  

Cucumber stay pretty crisp, too.  So you could slice these up and keep them in another airtight container.  Grate up carrots and keep them in a bowl.  Radishes, celery . . .
