Stretch Your Food Dollar: Hot Seitan Sandwich
Have you recently vowed to give up meat or are you abstaining for Lent? Do you miss a hot roast beef sandwich? Well, no need to hold out. Last week I showed you how to make your own meat substitute from scratch. And this week, here’s another recipe from Friendly Foods that will make your mouth water. Serve it up for dinner or take it in your lunch.
Hot Seitan Sandwich
(Makes 1 serving)
4 slices seitan, cut 1/8 inch thick
1 sandwich roll
1/2 cup vegan brown gravy
3/4 cup mashed potatoes
1/4 cup peas and carrots (or vegetable of your choice)
1. Heat the seitan in some of the tamari broth, or steam it. Remove from heat, drain, and pat dry.
2. Place the seitan on the roll. (Make sure the seitan is dry or you will end up with a soggy sandwich.) Place 1/4 cup of the gravy over the seitan. Cut the sandwich in two and place it on a dinner plate.
3. Mound the potatoes next to the sandwich and add the vegetables next to that. Make a hollow center in the middle of the mashed potatoes and put the rest of the gravy in the well. Serve warm.
This sandwich must be eaten with a knife and fork because it’s pretty messy. But hey, we know you like it sloppy! Next week I’ll be sharing Pickarski’s recipe for a vegan BLT, so stay tuned.
